Tear-free onion
A new kind of onion has been created by changing the chemical pattern found in onions. This new kind of onion allows people to chop it without making them cry or their eyes sting. Basically, it is a tear-free onion that is expected to be tastier and healthier as compared to the regular onions.
Tear-free onions have been tested in a laboratory by Dr. Colin Eady, a scientist from New Zealand Crop and Food Research, together with his collaborators in Japan. They said that if their research goes well, this kind of onion may become a mainstay in household kitchens within the next decades.
Although this project was never a piece of cake, the researchers were able to get through it with the help of the discovery of a Japanese scientist. The main factor to their success was by putting a chemical compound into silence. They stopped this compound from being converted to the tearing agent. Instead, they became responsible for flavor and health. However, scientists believe that this could still be improved in the long run.
This new discovery has become the number one topic of discussion at a recent seminar in the Netherlands as this has been considered one of the best things since sliced bread. Dr. Meriel Jones of Liverpool University said that it was exciting to hear Dr. Eady and his Japanese collaborators talk about their discovery. He added that this is a great development as it would give both farmers and consumers more options.
